Old Fashioned Apple Pudding

Apples to ApplesAs the winner of the Apples to Apples Giveaway, Susan Grondin, aka ‘Candle, from Alabama is sharing her favorite apple recipe with us! She also told me a story about her Great-grandmother Nelson that made me laugh! She is just the kind of spirited lady I love to write about! Susan said:

“As for the great grandmother. She was actually my step-father’s grandmother. He hailed from Oklahoma and died in 2012 at age 95. He lived with his grandmother for a while. She was a tough lady who had to raise 6 sons by herself as her husband died young. My stepfather told many stories about her but one in particular was my favorite. A man on horseback stopped by her house wanting some water. I guess for some reason she didn’t like the looks of him and told him not to get off his horse but to ride on out. He didn’t and she shot him. The sheriff found his body later and turns out he was an outlaw.

Even though, she was tough, she was the main Christian influence on my stepfather, reading to him from the Bible and taking him to church.” Thank you so much, Susan, for sharing that! I love the story!

I could not wait to try Susan’s apple pudding! And when the tantalizing aroma began to waft through the house, everyone was asking is it done yet? :o)

Here’s what Susan said about her recipe:  It is very simple but a favorite of many in my family, especially for birthdays. Usually you have most of the ingredients and it is quick to whip up.

Old Fashioned Apple Pudding

2-1/2 cups of Golden Delicious or Granny Smith Apples cored, peeled and chopped

1 Cup Sugar                                                       1 Cup plain Flour

1/4 C Butter                                                      1 Egg

1 Tsp Nutmeg                                                   1 Tsp Cinnamon

1 Tsp Baking Soda                                           1/2 Cup Chopped Pecans

Mix and Bake at 350 degrees for 45 minutes in a greased Casserole Dish (you can spray with Pam, that works).
